1 cup white sugar = ¾ cup amber maple syrup, rich taste or dark maple syrup, robust taste
or 1 cup maple sugar.
Recommended adjustments :
- Reduce the liquids in the recipe by about 3 tablespoons
- Slightly lower the oven temperature (about 10–15 °C / 25 °F)
In marinades
1 tablespoon honey = 1 tablespoon dark maple syrup, robust taste or very dark maple syrup, strong taste.
Result :
- Similar texture
- A more nuanced, local flavor
In dressings and sauces
1 tablespoon sugar = 1 tablespoon golden maple syrup, delicate taste or amber maple syrup, rich taste.
