Ingredients
For the salmon
- 4 salmon fillets
- 1/3 cup maple syrup
- 2 tbsp whole-grain mustard
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- Salt and pepper
For the sweet & savoury crumble
- 1/2 cup coarsely chopped local nuts or seeds
(pecans, walnuts, pumpkin seeds or sunflower seeds) - 1 tbsp butter
- 1–2 tsp maple sugar or maple nuggets
- A pinch of salt
- (Optional) a pinch of smoked paprika or cracked pepper
Preparation
- Preheat oven to 400°F.
- In a bowl, whisk together maple syrup, mustard, apple cider vinegar, and olive oil. Season with salt and pepper.
- Place the salmon fillets on a parchment-lined baking sheet. Generously brush with the maple glaze.
- Bake for 12–15 minutes, until the salmon is tender and lightly caramelized on top.
- Meanwhile, prepare the crumble. In a small pan, melt butter over medium heat.
- Add the nuts or seeds and toast gently until golden.
- Sprinkle in the maple sugar and salt, stirring to coat evenly.
- Cook 1–2 more minutes until lightly caramelized.
- Remove from heat and let cool.
- Serve the salmon with its cooking juices, alongside a fresh salad and topped with the crumble.
For an extra maple touch, serve your salad with a maple vinaigrette.
