Maple-Mustard Glazed Salmon with Sweet & Savoury Crumble

Ingredients

For the salmon

  • 4 salmon fillets
  • 1/3 cup maple syrup
  • 2 tbsp whole-grain mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • Salt and pepper

For the sweet & savoury crumble

  • 1/2 cup coarsely chopped local nuts or seeds
    (pecans, walnuts, pumpkin seeds or sunflower seeds)
  • 1 tbsp butter
  • 1–2 tsp maple sugar or maple nuggets
  • A pinch of salt
  • (Optional) a pinch of smoked paprika or cracked pepper


Preparation

  1. Preheat oven to 400°F.
  2. In a bowl, whisk together maple syrup, mustard, apple cider vinegar, and olive oil. Season with salt and pepper.
  3. Place the salmon fillets on a parchment-lined baking sheet. Generously brush with the maple glaze.
  4. Bake for 12–15 minutes, until the salmon is tender and lightly caramelized on top.
  5. Meanwhile, prepare the crumble. In a small pan, melt butter over medium heat.
  6. Add the nuts or seeds and toast gently until golden.
  7. Sprinkle in the maple sugar and salt, stirring to coat evenly.
  8. Cook 1–2 more minutes until lightly caramelized.
  9. Remove from heat and let cool.
  10. Serve the salmon with its cooking juices, alongside a fresh salad and topped with the crumble.

For an extra maple touch, serve your salad with a maple vinaigrette.
